Peach Puff Pastry Squares with Vanilla Ice Cream
Delightful peach puff pastry squares are filled with a sweet and buttery peach mixture, baked to perfection, and topped with vanilla ice cream, sea salt honey, and fresh mint leaves, making it an indulgent dessert perfect for any occasion.
What you need

tsp salt

pinch flour

tsp cinnamon powder

splash vanilla ice cream

oz puff pastry sheet
egg

tsp vanilla bean paste

bunch fresh mint leaves

tbsp butter
tbsp coarse sugar

tsp water

cup brown sugar
Instructions
1. Wash, de-seed and slice peaches; cook them in a pan with butter, brown sugar, vanilla and salt over medium heat until the sauce has thickened. 2. Roll your puff pastry dough on a floured surface and cut into 6 large squares. 3. Add the cooked peaches in the center along with the sauce and close up all 4 angles in the middle. 4. Brush egg wash, sprinkle some coarse sugar and bake at 400 F for 15-20 minutes. 5. Finish with a scoop of ice cream, a generous drizzle of sea salt honey and devour!
