What you need

Instructions
1: Preheat air fryer to 375 F. 2: Slice eggplants and salt them; place on paper towels to drain excess moisture. 3: Brush olive oil on eggplants and air fry in batches for about 10-12 minutes, flipping once. 4: To make the pesto, grind all pesto ingredients or place them in a food processor. 5: Once eggplant is ready, serve on a platter with tomatoes, Burrata, baguette crostini, and fresh pesto; finish with olive oil, flaky sea salt, and black pepper.View original recipe
