Pork Kavarma in a Pumpkin

A rich pork dish cooked inside a pumpkin, blending flavors of pork tenderloin, mushrooms, and leeks, simmered in white wine and tomato paste for a deliciously hearty meal.

What you need

cup white wine

tsp paprika

pepper
lb pork tenderloin

slice pork belly

tbsp tomato paste

cup water
tsp salt
oz baby bella mushroom

clove garlic clove

leek
pumpkin
Instructions
1: Wash pumpkin and remove guts; season with salt. 2: Chop mushrooms, leeks, pork tenderloin and pork belly. 3: Sauté pork first until golden then remove from heat. 4: Sauté mushrooms, leeks and garlic; once translucent add tomato paste and wine. 5: Add meat back, adjust salt and add water; bring to simmer. 6: Transfer into the pumpkin and bake in the oven at 400°F for two hours, removing the lid during the last 30 minutes. 7: Slice and serve warm.View original recipe
