Kale Harvest Salad

Has so much goodness to offer. It’s loaded with all the delicious Fall flavors- it’s sweet, tangy, crunchy and more! The key to make this salad delicious is in the preparation of the kale- it needs some good massage!

What you need

cup dried cranberries

tsp chipotle chili powder

red onion

tsp dijon mustard

cup sunflower seed

bunch kale

cup pomegranate
cup cranberries

summer squash

ground black pepper

tbsp balsamic vinegar

bacon

tsp coarse sea salt

tsp maple syrup
Instructions
1. Wash, de-seed and slice Delicata squash; season with olive oil, chipotle chili, salt and pepper; roast at 400 F for about 30 mins; 2. Remove stems on kale, tear it apart; 3. To make the dressing add all the ingredients above to a jar and give it a good shake; 4. Pour dressing over kale and massage it until softened; add your squash, pomegranate seeds, dried cranberries, bacon, red onions and candied pecans; 5. Mix well and enjoy!View original recipe
