Instructions
1: Preheat oven to 375 F. 2: Peel and cube potatoes; season them with olive oil, onion salt, black pepper, and chicken stock; mix well and set aside. 3: Pat dry the chicken and place head down; brush marinade over and roast for about 30 minutes. 4: Flip the chicken over, brush more marinade, top with half a lemon, and place back in the oven. 5: Continue basting and roasting until internal temperature reaches 160 F; it should take another 30-45 minutes depending on the size of the chicken. 6: Top with parsley, spoon the juices over, and enjoy!View original recipe
