tbsp olive oil
lb cod filet

oz grape tomato

cup kalamata olive

red onion

roasted red pepper

tsp oregano

garlic clove
tsp salt

black pepper

cup white wine

tbsp capers

lemon

parsley

Instructions
1: Preheat oven at 450 F. 2: To a skillet add sliced red onion, tomatoes, peppers and garlic; season with olive oil, salt and pepper, mix well and roast for about 12 minutes. 3: Once veggies have softened, add wine; capers and oregano; season Cod filets with olive oil, salt and pepper and nest them into the veggies; add lemon and put back in the oven for another 15-17 minutes. 4: Serve with parsley, thyme, squeeze some lemon juice and devour!View original recipe
