Instructions
1: Pat dry chicken breast, pound the thicker part, season with salt and pepper, and dredge in flour; shake off excess. 2: Sear chicken breast in avocado oil over medium heat until internal temperature reaches about 160 F; set it aside. 3: To make the sauce, lower heat and to the same pan add 4 tablespoons butter and flour, melt it to create your roux; add the wine and cook it down for a few minutes. 4: Add chicken stock, lemon juice and zest, finally add the capers; bring chicken back into the pan, spoon sauce over, cook for 3 minutes. 5: Turn the heat off and emulsify with 2 more tablespoons of butter. 6: Finish with black pepper, fresh parsley, and enjoy!View original recipe
