Chicken, Corn and Poblano Mini Quesadillas

These are so fun and easy to make and the whole family devours them. They are on repeat at mi casa!

What you need

red onion

jalapeno

avocado

cup mild cheddar

cup mozzarella cheese

tbsp cilantro

tbsp unsalted butter
lime

ground black pepper

tsp taco seasoning
tsp salt

whole wheat tortilla

cup sweet corn

poblano pepper

skinless boneless chicken breast
Instructions
1. Chop poblano and cube chicken breast; 2. Sauté chicken 2 tbs in olive oil, season with salt, pepper and taco seasoning; cook until golden and set it aside; in the same pan add 1 tbs olive oil and sauté the pepper for a coupe of minute, then add corn and lastly bring the chicken back into the pan, squeeze lime and adjust seasonings; 3. Prepare your guacamole- smash avocado and mix with the rest of the guacamole ingredients; 4. Add butter to a skillet, place your tortillas, add mixed cheddar and mozzarella, the chicken and corn mixture, more cheese; cook until golden on both sides and the cheese is melty; 5. Enjoy with guacamole or sour cream, or even both!View original recipe
