lb pork shoulder

cup water

Instructions
1: Julienne carrots and cucumbers and thinly slice purple daikon radish; marinate in water, rice vinegar, sugar, and salt for a few hours or overnight. 2: Add pork shoulder to a Dutch oven and pour a mixture of water, rice vinegar, and fish sauce over then sprinkle the seasonings on all sides; cover and roast at 350 F for about 4 hours or until fork tender. 3: Shred the meat and remove the fat; pour some of the drippings over the meat and pop in the oven for 10 mins to caramelize the edges. 4: To make the aioli, mix all ingredients above. 5: Assemble sandwiches by slathering spicy aioli on the bread, add plenty of shredded pork and pickled veggies, and finish with cilantro leaves.View original recipe
