Beef Birria Grilled Cheese Sandwiches

Beef Birria Grilled Cheese Sandwiches are one delicious way of enjoying juicy Birria. This a simplified version (yet so good) and all the Birria ingredients are cooked in one pot!

What you need

unsalted butter

shredded mozzarella
shredded cheddar

sourdough bread

all purpose flour

salt

bay leaves

coriander powder

ground cumin

oregano

pepper

clove

apple cider vinegar

ground cinnamon

garlic

yellow onion

tomato

beef broth

chili pepper

spices

pickle

chili beans

lb chuck roast
Instructions
1. Pat dry, trim (if needed) and cut beef into large cubes; season with salt and pepper; dredge in flour and sear in olive oil until caramelized on all sides; add onions, tomatoes and garlic and sauté until slightly charred; season with salt and pepper; 2. Add beef stock, vinegar, peppers and all the spices and seasonings; cover and transfer into a preheated oven at 350 F for about 2.5 hours or until fork tender; 3. Remove meat and shred it, it should be falling apart; 4. Strain the sauce through the sieve as you squeeze all the vegetables; if you want to easily remove some of the fat, add ice cubes to the warm sauce (not hot) and the fat would stick to the ice; 5. Add some consome to the shredded meat; 6. Assemble our sandwiches and grill on both sides until cheese is melty (I like to help the melting process with a torch a bit) and enjoy!View original recipe
