What you need

oz creme fraiche

tbsp table sugar

cup heavy whipping cream

tbsp butter

cup powdered sugar

oz graham cracker

bunch fresh mint leaves
lemon

tsp vanilla bean paste

oz berry mix
Instructions
1. Beat room temperature cream cheese with powdered sugar until smooth. 2. Add crème fraiche, cream, and vanilla to the cream cheese mixture. 3. Crush graham crackers and mix with melted butter. 4. Layer the cups with graham crackers on the bottom and the cream cheese mixture on top. Chill for at least an hour. 5. To make the berry compote, cook berries with sugar, lemon zest, and lemon juice until you achieve a jam consistency. 6. Top the cheesecake cups with the compote, mint leaves, and serve.
