Instructions
1: Wash and cut zucchini lengthwise, score them crisscross, season with salt and place them side down on paper towels to get the excess moisture out. 2: Sear zucchini in olive oil side down until browned, flip, season with more salt, pepper, and a drizzle of olive oil, and roast at 400°F for 30 minutes. 3: Make the salsa and once zucchini are cooked, top them with the salsa and the juices and enjoy!View original recipe
