oz rhubarb

cup sugar
tbsp coarse sugar

tsp vanilla bean paste

vanilla ice cream

powdered sugar
mint leaves

Instructions
1: Quarter strawberries and chop rhubarb; macerate with sugar and vanilla bean paste. 2: Roll puff pastry on a floured surface and cut into 4 squares; add the filling in the center and wrap up the edges; pop in the freezer for 10 minutes. 3: Preheat oven to 400 F. 4: Brush egg wash and sprinkle coarse sugar; bake for about 20 minutes. 5: Serve with vanilla ice cream, powdered sugar, mint leaves and enjoy!View original recipe
