What you need

chicken broth

white wine

baguette

flat-leaf parsley

lemon

spinach

capers

Instructions
1. Pat scallops dry, remove the side muscle and season with salt and paper; sear scallops in olive oil and butter for about 2 mins per side and set aside; 2. In the same pan add the wine and cook it half way down, add chicken stock and lemon juice and reduce the sauce then add the spinach and capers, bring to boil then add the scallops back into the pan; 3. Finish with more black pepper, lemon slices, parsley and serve over baguette crostini and enjoy! Note: this same dish can be served over pasta if you prefer as it has plenty of zesty sauce!View original recipe
