Smashed Lamb Gyro

These came out so juice, flavorful and delicious and you can put them together in less than 30 mins including making the homemade tzatziki. This will be made over and over again and it’s a great option for when you are entertaining in the backyard.

What you need

tbsp baby dill

cucumber

cup low fat plain yogurt

ground black pepper

tsp salt

tsp rosemary

tbsp flat-leaf parsley

garlic

lb ground lamb
scallion

green leaf lettuce

tomato

Instructions
1. To make the tzatziki mix yogurt with chopped cucumbers, dill, garlic, salt, drizzle olive oil and store in the fridge; 2. To make the lamb mixture- mix your ground lamb with green onions, parsley, rosemary, garlic, salt and pepper; shape 4 balls and place them on a flat top or a skillet; add your pita and press firmly with a saucepan until you see the meat comes to the edges of the pita; (meat will shrink as it cooks); 3. Cook for about 4-5 mins, flip over cook for a couple more; optionally you can tilt the pita and remove some of the fat; 4. Once pitas are cooked add some tzatziki, sliced tomatoes, red onions, green onions and devour!View original recipe
