What you need

lb asparagus

parmigiano reggiano

microgreens

olive oil
salt

pepper
fl oz EVOO
tbsp sherry vinegar

tsp black pepper

spring onion
Instructions
1: Wash, trim and pat dry asparagus and season with salt, pepper and olive oil to taste; air fry at 390°F for about 8 minutes; optionally pan sear or grill. 2: To make the dressing, chop your spring onions, add all ingredients to a pestle and stir and press a few times to get the onion juices infusing the dressing. 3: Assemble your prosciutto, asparagus, micro greens, and shaved Parmigiano Regiano and roll; repeat that same process for each one. 4: Drizzle the dressing on top and enjoy.View original recipe
