Blueberry Peach Cheesecake Galette

1. Preheat oven to 350 F.

2. Wash and slice peaches, add blueberries and macerate with sugar; set it aside.

3. Mix cream cheese with egg yolk, vanilla bean paste, and honey.

4. Butter phyllo sheets and arrange them in a circle.

5. Spread cheesecake mixture in the center and place fruit on top.

6. Roll up the edges to turn them into a crust; brush with egg wash and sprinkle coarse sugar.

7. Bake for about 35 minutes or until golden.

8. Serve with vanilla ice cream, drizzle with sea salt honey and garnish with mint leaves.
