Instructions
1: Slice your red onion and add to a jar along with boiling water, rice vinegar, salt, sugar, peppercorns, garlic, lime juice, and rind; let them sit for a few hours or overnight. 2: To make the avocado crema, grind garlic and jalapeños, smash the avocado, and mix with sour cream, cilantro, cumin, lime juice + zest, salt, and cilantro. 3: Season fish with all the spices above and sear in olive oil for about 3-4 minutes per side. 4: To assemble, char your tortillas and add the avocado crema, romaine lettuce, bronzed fish, pickled red onions, Cotija cheese, squeeze of lime, and enjoy!View original recipe
