A delicious way to enjoy zucchini that makes them pillowy soft and melt in your mouth. This dish pairs well with a fresh tomato salsa.

What you need

cup olive oil
salt

black pepper

tomato

shallot

tbsp parsley

tbsp champagne vinegar

tbsp olive oil
tsp salt

black pepper
Instructions
1: Wash and cut zucchini lengthwise, score them crisscross, season with salt and place them side down on paper towels to get the excess moisture out. 2: Sear zucchini in olive oil side down until browned, flip, season with more salt, pepper and a drizzle of olive oil and roast at 400 F for 30 mins. 3: Make the salsa and once zucchini are cooked, top them with the salsa and the juices and enjoy!View original recipe
