1. Julienne carrots and chop onions; 2. Sauté chicken thighs in olive oil with a bit of salt and black pepper until lightly caramelized and set aside; 3. In the same pan sauté onions until softened, shred ginger and garlic, bring the chicken back along with carrots and cashews; add sweet chili sauce, soy sauce and lime juice, stir well and cook for a few; 4.
