Stuffed peppers

My Baba’s (grandma’s) stuffed peppers. Growing up in Bulgaria we used to spend every single summer with my grandparents in the countryside.

What you need

lite olive oil

black peppercorn
iodized salt

cup feta

free range egg

vine ripened tomatoes
clove garlic

summer squash
Instructions
1. Cut tomatoes into 8 pieces and add to a greased baking dish, then slice the garlic on top and season with salt, pepper, olive oil and mix; 2. Crumble the feta and mix with the eggs, parsley and black pepper; 3. Remove the pepper stems and de-seed them; stuff the peppers and arrange them on top of the tomatoes as you elevate the open side over more tomato slices so the egg/feta mixture doesn’t leak; 4. Season with salt, pepper, parsley and olive oil and cook in a preheat oven at 400 F for about an hour; 5. Finish with more parsley, peel (optionally) and enjoy!View original recipe
