Steak & Vegetable Quesadillas

These are an absolute staple at our home and perfect for lunch, dinner and when entertaining! They are a crowd pleaser and you can never go wrong with them!

What you need

sour cream

pico de gallo

unsalted butter

black peppercorn
salt

lime

tbsp olive oil

tbsp seasoning mix
cup shredded cheddar

black beans

red bell pepper

yellow onion

beef steak

flour tortilla
Instructions
Wash, chop your peppers and onions and sauté in olive oil until softened over medium-high heat; season with Mexican/taco seasoning, salt and pepper and add drained black beans and the juice of a lime; Season and grill your steak to desired temperature and chop it; Shred some cheese of choice; To assemble- melt butter over medium heat, place your tortillas on the pan and start layering cheese, pepper, onion and bean mixture, steak and more cheese on top; Fold tortillas and sear both sides until the cheese melts; Serve with Picco de Gallo, sour cream and guacamole and enjoy!
