A fresh Spring Potato Salad featuring yellow gold potatoes, radishes, asparagus, snap peas, and a zesty herby lemon vinaigrette.

What you need

oz asparagus

oz snap peas

cup olive oil

tsp salt

tsp red wine vinegar

tsp dijon mustard

tsp black pepper
tbsp dill

tbsp parsley
Instructions
1: Boil potatoes in salted water until fork tender, remove from water and set them aside to cool. 2: In the same boiling water drop asparagus and snap peas for 2 minutes and then transfer into iced water to stop the cooling process. 3: To make the dressing, whisk all ingredients above and mix in potatoes, asparagus, radishes, green onions and enjoy!View original recipe
