What you need

lb asparagus

tbsp olive oil
salt

pepper
slice prosciutto

cup parmigiano reggiano

cup olive oil
tbsp sherry vinegar

oz chive
salt

black pepper
Instructions
1: Wash, pat dry and trim asparagus; fold some prosciutto; season asparagus with olive oil, salt and pepper and drizzle a bit of olive oil on the prosciutto also. 2: Roast at 425°F for about 15 minutes or until desired doneness. 3: To make the dressing, blend all the ingredients above. 4: Arrange your salad by adding greens, roasted asparagus, crispy prosciutto and shaved Parmigiano Reggiano; pour this delicious dressing and enjoy.View original recipe
