What you need

lb carrot

baby dill

tbsp pomegranate

lemon

tbsp pistachio
orange

pepper

tsp honey

tbsp extra-virgin olive oil

tsp coarse sea salt
Instructions
1. Preheat oven to 450 F; 2. Wash and pat dry carrots if some are significantly larger- split them in half); season with olive oil, salt and pepper and roast for about 25 mins; 3. To a food processor add goat cheese, honey, olive oil, orange juice, salt and pepper and process until smooth; 4. Smear the goat cheese on a platter, add roasted carrots on top; finish with Pistachios, pomegranate seeds, lemon zest, orange zest and dill!View original recipe
