Instructions
1: Preheat oven to 400 F. 2: Wash and slice potatoes lengthwise; season with olive oil, salt, and pepper, then place them face down. 3: Roast for about 25-30 minutes depending on size. 4: To make the chimichurri sauce, add all ingredients to a food processor and give it a blitz. 5: Once potatoes have roasted, drizzle some chimichurri over them and serve with extra sauce for dipping.
