Instructions
1: To make the basil pesto, add all pesto ingredients to a food processor and give it a blitz; set aside. 2: Pat dry and season chicken breasts with olive oil, paprika, lemon juice, salt, and pepper. 3: Add olive oil to a pan and sear the chicken breasts skin side down until golden; flip them over. 4: Add cherry tomatoes, another drizzle of olive oil, adjust salt and pepper, and transfer to a preheated oven at 400°F. 5: Cook for another 10-15 minutes or until the internal temperature reaches at least 165°F. 6: Finish with basil pesto, basil leaves, and pour the delicious juices on top.View original recipe
