What you need

tbsp olive oil
salt

pepper

cup parsley

cup cilantro

lime

jalapeno

garlic clove

yellow onion
cup EVOO

tsp oregano

tsp honey
tbsp red wine vinegar
tsp salt

chili flakes
Instructions
1: Wash and slice cauliflower into 2 middle discs; season with olive oil, salt and pepper and pan sear over med-high heat until golden; then finish cooking in the oven at 400 F for about 15 mins or until softened. 2: To make the chimichurri, chop parsley, cilantro, onions, garlic and mix with olive oil, vinegar, lime juice, salt, honey, and chili flakes or add all ingredients into a food processor. 3: Pour chimichurri over roasted discs and enjoy!View original recipe
