What you need

yellow squash

cup tomato

cup olive oil
tsp salt

black pepper

tsp oregano

garlic clove

tbsp parsley

tbsp dill

shallot
tbsp red wine vinegar
tsp salt
Instructions
1: Wash and slice your vegetables; add to a bowl and season with olive oil, salt, pepper, garlic and oregano. 2: Arrange veggies in a ratatouille style in a 11-inch cast iron pan or baking dish. 3: Bake at 400 F for about 40 mins. 4: To make the dressing, finely chop parsley, dill and shallot and mix with olive oil, vinegar and salt. 5: Pour dressing over and enjoy!View original recipe
