Poached Citrus Red Wine Pears

An elegant dessert of poached Bosc pears in a citrus-infused red wine mixture, served with whipped mascarpone cream and garnished with crushed pistachios and thyme. A delightful treat perfect for special occasions.

What you need

fl oz red wine

orange
lemon
lime

cup sugar

cinnamon stick

oz mascarpone

cup heavy whipping cream

cup powdered sugar

Instructions
1: Add wine, cinnamon stick, cloves, sugar, vanilla, squeeze orange, lemon and lime, and add the rinds; bring to boil and simmer for 10 minutes until the sugar has dissolved. 2: Peel and core pears and add to the wine citrus mixture; poach for about 45 minutes while flipping them from time to time; let cool at room temperature; cover and refrigerate for at least 6 hours or overnight. 3: Remove pears and strain the wine; reduce it down to 1 cup and let it cool. 4: Whip heavy whipping cream with powdered sugar and set aside; lightly beat mascarpone with vanilla and gently fold them together. 5: To serve, smear mascarpone cream on a plate, dip and place a pear over; drizzle more wine sauce and finish with crushed pistachios and thyme.View original recipe
