Pasta with Beef and Pancetta Sauce

What you need

lb ground beef

tsp ground cinnamon

Instructions
1. Sauté pancetta until fat is rendered and set it aside. 2. Finely chop onion, carrots, and celery and sauté in olive oil and pancetta fat until softened; season with salt and pepper. 3. Add chopped garlic and tomato paste. 4. Cook and crumble beef and then add in red wine and ground tomatoes. 5. Add pancetta back into the pan along with bay leaf, thyme, salt, pepper, and cinnamon; stir and add milk; simmer until desired thickness. 6. Mix in al dente pasta and some pasta water. 7. Serve with plenty of grated Parmigiano Reggiano and parsley.
