Instructions
1: Preheat oven to 425°F. 2: Remove the top shell of the lobster tails, de-vein, wash, pat dry, and brush with a mix of melted butter, olive oil, salt, and pepper all over. Roast for about 12 minutes or until internal temperature registers 130-135°F. 3: To make the cowboy butter, add 7 tablespoons butter to a pot and cook chopped shallot for 2 minutes.
