A vibrant Italian Pasta Salad filled with various textures and amazing flavors, perfect for grilling season. This salad combines cavatappi pasta with fresh vegetables and a tangy red wine Dijon vinaigrette.

What you need

lb grape tomato

persian cucumber

oz salami

cup parmigiano reggiano
oz marinated artichokes

red onion

basil leaves
cup extra-virgin olive oil

tbsp red wine vinegar

tsp dijon mustard

tbsp parsley

lemon

tsp italian seasoning

tbsp parmigiano reggiano

tsp salt

tsp black pepper
Instructions
1: Cook your pasta until Al dente according to package instructions and then rinse with cold water; this will prevent it from sticking. 2: Chop your cucumber, red onion, halve tomatoes, slice salami, peperoncinis and basil; quarter artichoke hearts, shave some Parmigiano Reggiano. 3: To make the dressing, whisk all the ingredients above. 4: Add everything to a large salad bowl, pour dressing over, mix well and enjoy!View original recipe
