1: Mix water, sugar, yeast, and whole wheat flour, stir and set aside for 10 minutes. 2: Measure all-purpose flour and add salt and olive oil. 3: Pour the yeast mixture over the flour and mix. 4: Flour a surface and knead the dough for about 5-10 minutes or use a stand mixer with a dough hook. 5: Form a ball and let it rest in an oiled bowl for 60-90 minutes or until it has doubled in size. 6: Preheat the oven to 500°F and set a pizza stone in for at least 20 minutes. 7: Punch the dough and divide into 8 pieces. 8: Fold the edges and roll each piece until the seams disappear. 9: Cover with a wet towel for another 30 minutes. 10: Roll the dough into 7-inch discs about 1/4 inch thick and cover again with a wet towel for 5-10 minutes. 11: Place 2-3 pitas at a time bottom up on the pizza stone and cook for 3 minutes or until the pita puffs. 12: Layer pitas on a wire rack and cover with a towel to prevent drying out or store in a zipper bag.View original recipe
