What you need

oz snow peas

tbsp fish sauce

in fresh ginger

tsp black pepper

red bell pepper
tsp cornstarch
lb cod

cup coconut milk
lime

bunch cilantro

tbsp coconut sugar

tsp salt

cup water

clove garlic clove

cup jasmine rice

tbsp thai red curry paste
Instructions
1: Add coconut rice ingredients to a rice cooker and set aside. 2: Slice the red pepper and clean the snow peas. 3: Slice the fish into pieces and season with salt and pepper. 4: Add avocado oil to a pan and sauté ginger and garlic until fragrant. 5: Add red curry paste, coconut milk, coconut sugar, fish sauce, lime zest and juice, salt, and pepper, then add the fish. 6: Cover and cook for about 2 minutes. 7: Add peppers and snow peas, cover, and cook for a few more minutes. 8: Pour the cornstarch slurry and top with cilantro. 9: Serve with coconut rice, top with cilantro, crushed red pepper, and enjoy!View original recipe
