Eggplant Salad Boats

These delicious Eggplant Salad Boats are made with a combination of eggplant, tomatoes, cucumber, red onion, feta cheese, and fresh herbs. The eggplant is seasoned and air-fried to perfection, then topped with a refreshing mix of veggies and a drizzle of olive oil and red wine vinegar.

What you need

red onion
tsp salt

eggplant

fl oz olive oil

bunch parsley
english cucumber
bunch mint leaves
tbsp red wine vinegar
bunch oregano

cup fresh tomatoes
Instructions
1: Wash and cut eggplant in half, score and season with salt; let sit on paper towels to get excess moisture out. 2: Brush olive oil on both sides and air fry at 390 F for about 18-20 mins. 3: Chop all the veggies and season with olive oil, red wine vinegar and salt; mix and spread over eggplants, followed by cubed feta. 4: Finish with more EVOO and oregano and enjoy.View original recipe
