purple potatoes

3 lb purple potatoes

salt

2 tsp salt

horseradish

1 tbsp horseradish

black pepper

½ tsp black pepper

flour

3 tbsp flour

parsley

chive

parmigiano reggiano

½ cup parmigiano reggiano

panko breadcrumbs

2 cup panko breadcrumbs

avocado oil

creme fraiche

1 cup creme fraiche

horseradish

1 tbsp horseradish

lemon

salt

black pepper

¼ tsp black pepper

parmigiano reggiano

2 tbsp parmigiano reggiano

chive

dill

Instructions

1: Peel, wash and chop potatoes; boil in salted water until fork tender; mash potatoes however you like, preferably using the sieve method.

2: Mix mashed potatoes with Kelchner’s Horseradish, Parmigiano Reggiano, flour, chives, parsley, salt and pepper.

3: Scoop out mashed potatoes, coat them in breadcrumbs and lightly roll.

4: Deep fry in batches at 350 degrees F until golden.

5: To make the sauce: mix all the ingredients above.

6: Serve potato balls with more Parmigiano Reggiano, chives then dip in and enjoy!
