Chipotle Chili Shrimp, Guacamole Cucumber Boats- these are a summer staple and must make. They are fast, easy and delicious as well a great low carb protein option!

What you need

yellow onion

avocado

ground black pepper

cumin powder

garlic powder

smoked paprika

chipotle chili powder
fine sea salt

extra-virgin olive oil

lb shrimp

lime

cilantro

scallion

cucumber
Instructions
1. To make the guacamole- smash avocado and mix with the rest of the ingredients and set aside; 2. Wash and slice your cucumber lengthwise and in the middle and scoop out the seeds; 3. Rinse and pat dry shrimp and season with olive oil, salt, smoked paprika, chipotle chili, garlic powder and cumin; mix and sear over med high heat 1-2 mins per side; finish with fresh ground pepper; 4. Assemble your cucumber boats with guacamole, shrimp, green onion, cilantro, lime juice + zest and enjoy! Note: I had 4 extra shrimps I enjoyed behind the scenes but you can make one more boat if you wish! 😉View original recipe
