What you need

tarragon

lb shiitake mushrooms

skinless boneless chicken breast

thyme
parsley

tbsp creme fraiche
tbsp dijon mustard

cup beef bone broth
cup extra-virgin olive oil

tbsp salted butter
cup all purpose flour

pinch salt

pinch black peppercorn
Instructions
1. Pat dry and season chicken breast with salt and pepper sauté in 2 tbs olive oil + tbs butter with thyme and rosemary; once seared on one side, flip and cover the pan; cook until internal temperature is 165 F; 2. In the same pan add 2 tbs olive oil, 2 tbs butter and garlic and sauté the sliced mushrooms with chopped tarragon; add wine- let it evaporate partially; add bone broth, simmer for a few; add creme Fraiche and whole grain mustard; bring the chicken back into the pan; adjust salt and pepper; 3.
