What you need

parsley

pepper

salt

potato

celery

yellow onion

carrot

garlic

bay leaves
extra-virgin olive oil
lb chicken leg
Instructions
1. Add chicken to a pot along with celery, garlic, bay leaves, black pepper and salt and boil covered over medium heat until fully cooked; it should take about 30- 40 mins or so; 2. Chop onions, carrots and cube potatoes; 3. Once chicken has cooled enough to handle, set it aside to shred it and strain the broth; 4. Sauté onions and carrots in olive oil until softened, add cubed potatoes and broth; bring to boil then simmer until potatoes are fork tender; add vermicelli and shredded chicken, boil for another 5 mins; adjust salt and pepper, finish with parsley and enjoy!View original recipe
