½ cup croutons

lemon juice

2 tbsp lemon juice

romaine lettuce

1 head romaine lettuce

cooking oil

½ cup cooking oil

parmigiano reggiano cheese

¼ cup parmigiano reggiano cheese

anchovy

Instructions

1: Start by emulsifying the egg with oil until it thickens like mayonnaise; add Dijon mustard, lemon juice, crushed garlic, salt, pepper, Parmigiano Regiano, and wild white anchovies and blend until smooth.

2: Wash and slice Romaine lettuce in half; season with salt and pepper and char on a hot skillet for 1-2 minutes per side until caramelized.

3: Drizzle the delicious dressing over the charred Romaine, top with croutons, lemon zest, Parmigiano Regiano, black pepper and enjoy!
