What you need

tsp ground cumin

tbsp fresh cilantro

tsp jalapeno

avocado

tsp black pepper
clove garlic

tbsp natural cane sugar

cup seasoned rice vinegar
red onion
lime

tortilla

cotija cheese

tsp lite olive oil

romaine lettuce
tsp iodized salt

tsp ground white pepper

tsp black peppercorn

tsp onion powder

tsp garlic powder

tsp cayenne pepper

tsp smoked paprika

lb cod fish fillet
Instructions
1. Slice your red onion and add to a jar along boiling water, rice vinegar, salt, sugar, peppercorns, garlic, lime juice and rind; let them sit for a few hours or overnight; 2. To make the avocado crema- grind garlic and jalapeños, smash the avocado and mix with sour cream, cilantro, cumin, lime juice + zest, salt and cilantro; 3. Season fish with all the spices above and sear in olive oil for about 3-4 minutes per side; 4. To assemble- char your charred tortillas and add the avocado Crema, romaine lettuce, bronzed fish, pickled red onions, Cotija cheese, squeeze of lime and enjoy!View original recipe
