Berry Danish Pastry Cups

for all of you who absolutely love my Danish Pastries these are just another variation that came to mind while playing with Puff Pastry dough. Super easy and quick to make but yet everyone would devour them!

What you need
lemon

tsp vanilla bean paste

oz cream cheese

mint

tbsp granulated sugar

sugar

tbsp all purpose flour

tsp cornstarch

tbsp natural cane sugar

cup berry mix

oz puff pastry
Instructions
1. Preheat oven at 400 F; 2. Wash, pat dry and macerate your berries with sugar and cornstarch and set them aside; 3. Mix cream cheese with sugar, lemon juice + zest, vanilla bean paste; 4. Roll your puff pastry on a floured surface and cut into 6 squares; add them to a muffin tin as you press the bottom down; add a spoonful of the cream cheese filling and berries; brush egg wash and sprinkle coarse sugar; 5. Bake for about 15-20 mins; 6. Finish with powdered sugar, mint leaves and enjoy!View original recipe
