Authentic Beef and Potato Tostadas

This one is a staple at my home and make them quite often as they are so easy and everyone loves them! The potatoes add a creamy texture and a richer taste, don’t skip them, even if you think potatoes don’t belong in Tostadas!

What you need

lb ground beef

white onion
potato

olive
mexican rub

salt

pepper

tomato

cup cilantro
lime

shredded cheddar

sour cream

cheddar cheese
Instructions
0 Chop your onion and potato and sauté over medium heat in olive oil, salt and pepper; cover and cook until softened 1 Make a well and add your ground beef, season with your Mexican seasonings, salt and pepper and cook the beef on its own for a few minutes then mix with the potatoes and onions; cook until no more pink; optionally remove some of the excess fat out 2 Top tortillas with beef and shredded cheddar; bake at 400 F until the cheese is melty, it should take about 8 mins 3 Top with lettuce, avocado, sour cream, Picco De Gallo and enjoy!View original recipe
