It’s a roasted eggplant and red pepper spread popular in Southeast Europe. Ajvar comes from the Turkish word “havyar” which means “caviar”. The process if making is slightly lengthy but people would normally make big batches and can it for the winter

Instructions

1. Wash and roast/grill your eggplant and peppers until softened; peppers took about 25 mins and eggplant about 30 mins;
2. Remove from the grill and cover with a plastic wrap; let cool, peel and de-seed;
3. To a food processor add peppers, eggplant, garlic, olive oil, red wine vinegar, and salt and blend;
4. Pour mixture into a pot and simmer for about 10-15 mins to intensify the flavor and thicken; finish with fresh ground pepper and enjoy immediately or keep refrigerated!
