What you need

tsp kosher salt

tbsp red wine vinegar

cup extra-virgin olive oil

garlic
chili pepper

Instructions
1. Wash and roast/grill your eggplant and peppers until softened; peppers took about 25 mins and eggplant about 30 mins; 2. Remove from the grill and cover with a plastic wrap; let cool, peel and de-seed; 3. To a food processor add peppers, eggplant, garlic, olive oil, red wine vinegar, and salt and blend; 4. Pour mixture into a pot and simmer for about 10-15 mins to intensify the flavor and thicken; finish with fresh ground pepper and enjoy immediately or keep refrigerated!View original recipe
