I love eggplant and how versatile it is. You can do so much with it and this air fried eggplant is easy, healthy and delicious! It’s a great vegetarian “charcuterie” option but yet it makes a delicious lunch as well!

What you need
salt

olive oil

heirloom tomato

cup pesto

burrata

slice sourdough bread

fine sea salt
Instructions
0 Wash and slice your eggplant, season with salt and layer on paper towels to get the excess moisture out 1 Brush eggplant with olive oil and air fry at 390 F for about 10-12 mins as you flip it half way through 2 Assemble your board with sliced heirloom tomatoes, eggplant, burrata, toasted sourdough bread and pesto and enjoy!View original recipe
