1. Cook your quinoa according to package instructions; let it cook; 2. Wash and chop your vegetable and throw everything into a salad bowl along with olives, avocado and feta cheese; 3. Drizzle some good quality extra virgin olive oil, lemon juice and salt; mix in and enjoy!
