1. Husk your tomatillos; half tomatillos, tomatoes and jalapeño; quarter onion and and split it; crush garlic; 2. Add 2 tbs of olive oil to a pan and add all vegetable to the pan, sear for about 10 mins then broil at 450 F until charred; 3. Add all roasted veggies to a food processor along with 1 tablespoon of olive oil, red wine vinegar, salt, pepper and cilantro; give it a blitz; 4. Serve with chips or enjoy with your Mexican food of choice!
