1: Slice guanciale into strips and cook over medium heat until the fat has rendered; set it aside. 2: Salt boiling water and drop your spaghetti; cook until al dente. 3: Finely grate your Pecorino Romano and mix with the egg, egg yolks, 1 tablespoon of the guanciale fat and black pepper; add 1/4 cup of pasta water and stir until you have a paste consistency. 4: Pour out some of the fat from the pan and reserve about 1-2 tablespoons; transfer spaghetti into the pan (heat is off) and pour over the egg and cheese mixture; add guanciale as you reserve some to top off. 5: Toss until creamy; serve up topped with more guanciale, black pepper and enjoy!
