1: Trim and cut Chuck into chunks. 2: Season with salt and pepper and dust with flour. 3: Shake off excess flour and pan sear in olive oil over medium-high heat until golden. 4: Remove Chuck from heat and add tomatoes, onions, and garlic. 5: Pan fry for a couple of minutes then add the meat back along with beef stock, vinegar, deseeded peppers, cinnamon stick, bay leaves, and spices. 6: Cover and transfer to a preheated oven at 400°F for 1.5 hours or until tender. 7: Shred meat, strain the consome, and mix a ladle of it with the shredded meat. 8: Brush tortillas with butter and pan sear for about a minute to soften. 9: Assemble the taquitos and secure with a toothpick if needed. 10: Air fry at 390°F for 5 minutes or pan fry. 11: Garnish with sour cream sauce, chopped onions, cilantro, jalapeños, and cayenne. 12: Serve with guacamole and consome for dipping.
